2 tablespoons vegetable oil (divided, for frying)

3 cloves garlic, minced

1 small onion, chopped

1 cup mixed vegetables (peas, carrots, corn)

2 green onions, sliced (for garnish)

3 tablespoons soy sauce (to taste)

1 teaspoon sesame oil (optional, for flavour)

Salt and pepper to taste
